Meringata velocissima all'after-eight (menta e cioccolato fondente) - Meringue pie with mint and chocolate









Tornata da Madrid e con intenzioni agguerrite. Voglio fare paella, salmorejo e un sacco di altri piatti meravigliosi assaggiati in questa città stupefacente!
c'ero già stata in altre occasioni e non mi era mai piaciuta, Madrid: dopo aver girato l Italia e posti come la Toscana il Salento il veneto l Umbria; e la Spagna dei paesi baschi e l Andalusia e città come Saragozza e la vicina Toledo. ..o capitali come Parigi e Praga. ..Madrid non acchiappa nemmeno un terzo del fascino. Ma manco un quarto. Più seducente di Londra ma ci vuole poco (Londra proprio non mi piace...)

...ma per il resto non c è storia. Eppure stavolta. ..me ha encantada. Non per l architettura e non per la bellezza (per la sfacciata apparenza c è Sevilla che ti abbaglia). Però sarà che dopo quasi 1 anno e mezzo a sud di stuttgart son pronta a ripensare agli standard di bellezza...Saràche sono felice di respirare inquinamento. ..però madrid è fantastica da vivere. Ci abiterei . I vicoletti di Lavapies e di Letras, la cultura, un po di flamenco che non guasta anche se qui è caro e un po fuori zona, giusto per i turisti che credono che il flamenco sia genericamente spagnolo (fortuna maxima : siamo capitati durante il festival flamenco!!! e abbiamo visto a teatro uno spettacolo spaziale, anche se il flamenco a teatro è un po' un paradosso - a meno che non sia la Casa de la Memoria a Sevilla...ma vabbè), un po' la gente che trovi accalcata nel negozio di salumi al piano di sotto lontano dai turisti e nascosti, mica si vede dallla strada, e sono li pigiati come sardine a trincare birra e rioja con tanto prosciutto e chorizo mentre parlano rumorosamente e fanno un casino allegro e ti fanno assaggiare dai loro piatti quando gli chiedi cosa è quel salume palliduccio. Ci sono musei che sono fantastici e la generosità madrilena te li fa gustare gratis almeno per due ore al giorno, che abitando qui sarebbero fantastiche per non far overdose di maravilla e per farsi un Piso (piano, floor) cada vez en cuando. C è la sangria che non senti assolutamente l alcool è Succo di arancia aromatizzato al vino e te ne bevi due litri in due in una sera e ci vuole giusto un crucco per dire mah si io un po il vino lo sento...c è la metro fantastica. La gente. La lingua spagnola. La sensazione di ieri alle 21.00 di essere alle 17 o alle 18 del pomeriggio all uscita dal lavoro per tanta gente in giro. E alle 22.40 le signore con la borsa della spesa che chiacchierano sedute su uno scalino in piazza tirsoDe Molina come se fosse mezzogiorno. Io me soy enamorada di questa città.

COMUNQUE:
tornati stanchi, e a cena che si fa? una piada con farina di farro integrale, un po' di forellen (trota) affumicata, mela e yogurt, e per dessert? e me l'After Eight non è mai piaciuto, ma al crucco sì: e cosi, mi invento questa ricettina...che alla fine è piaciuta pure a me!

INGREDIENTI:

per la base:
2 bianchi d'uovo
4 cucchiai di zucchero
succo di mezzo limone
1 cucchiaino di maizena
colorante alimentare verde se lo avete, qualche goccia (non è necessario ovviamente)

Per la crema:
2 rossi d'uovo
circa 500 ml latte 
2 cucchiai zucchero
2 cucchiai di maizena
50 gr cioccolato fondente
1 cucchiaio di cacao amaro
1 cucchiaio abbondante di menta secca 
2 goccine di colorante alimentare verde (non sono necessarie ovviamente)

Per la base:
montare a neve fermissima i bianchi con il succo di limone, aggiungendo piano piano lo zucchero, 
 1 cucchiaino di maizena. La meringa è pronta quando pur rovesciando il contenitore, non si muoverà. Potete colorarla con due goccine di colorante alimentare verde come ho fatto io.
A questo punto con l aiuto di un mestolo di silicone rovesciatela (tenendone da parte due cucchiaiate) su una teglia coperta di carta da forno. Date una forma circolare, piuttosto spessa (se la fate troppo sottile, sarà dura staccarla). Con le due cucchiaiate rimaste, fate dei pallini "Informi" che poi userete per la decorazione (oppure fate un altro cerchio più o meno che sbriciolerete sopra la torta finita). Infornate a 100-110 gradi per 1 ora. Dopo un'ora, staccate i pezzettini di meringa più piccini, e continuate a cuocere il cerchio più grande per altra mezz'ora.
Fate raffreddare.
Intanto preparate la crema: fate una pasticcera di fatto come preferite, aggiungendo al latte la menta (io ho fatto una roba veloce veloce sciuè sciuè, ovvero fate scaldare il latte a cui aggiungerete la menta, quando è caldo versatelo sui tuorli che avete precedentemente sbattuto con zucchero e maizena, mescolate bene e riportate sul fuoco e fate addensare. Potete anche qui aggiungere due goccine di colorante verde.
Quando la crema è un po' più fredda, aggiungete il cioccolato fondente tagliato a pezzettini (la crema meglio sia non caldissima, sennò il cioccolato si scioglie! a me piace che si senta a pezzettini scrocchiarelli).
Spalmate la crema sulla base di meringa , spolverate il cacao amaro sopra e sbriciolate sopra i pezzettini di meringa cotti a parte. Fate raffreddare (meglio se non in frigo perchè sennò la meringa vi risulterà appiccicosa., cosa che a me personalmente non dispiace, ma vedete voi!)

Returned from Madrid and with fierce intentions. I want to make paella, salmorejo and a lot of other wonderful dishes I tasted in this amazing city!I had already been there on other occasions and I had never liked it, Madrid: after touring Italy and  Spain and Portugal almost everywhere, north and south and centre. .. or capitals like Paris and Prague and Budapest. .. Madrid can't compete. Of course I always found it more seductive than London but that is too easy...

 Yet this time. ..me ha encantada. Not for architecture and not for beauty in itself (for the blatant appearance there is Sevilla that dazzles you). But maybe after almost 18 months in Germany I am almost ready to rethink my standards of beauty (I like it here but there is no comparison possible with the south of Europe) ... maybe I'm just happy to breathe pollution after the wonders of biking paths and green around .. but Madrid is fantastic to live. I would move to live there tomorrow. The alleys of Lavapies and Letras, the culture, a bit of flamenco that does not hurt even if it is expensive here and a bit outside the area, just for tourists who believe that the flamenco is generically Spanish (maxima luck: we arrived during the festival of flamenco !!! and we saw a show in the theater, even if the flamenco at the theater is a bit of a paradox - unless it is the Casa de la Memoria in Sevilla ... but oh well).
I loved the crowded people in the charcuterie shops downstairs, away from tourists and hidden, not visible from the street,  pressed like sardines , drinking beer and rioja with lots of ham and chorizo ​​while they speak loudly and make a happy chaos and let you taste from their dishes when you ask them what is that pale salami you've never seen before.  
There are museums that are fantastic (three, and we visited them all for hours and hours) and the generosity of Madrid let you enjoy them free for at least two hours a day: which,  if you lived there, would be fantastic in order not to overdose of maravilla - you could enjoy just one Piso (floor) cada vez en cuando.  
And ohhh sangria - you do not feel absolutely alcohol because is mostly made out of orange juice flavored with wine and you can drink 1 liter  in one evening and it takes just a german to say maaaaah yes I feel a bit the wine  ... 
And the fantastic metro that conncects perfectly the city, also the suburbs, so that you dont feel you are in a metropolis, there is no traffic, no chaos, no pollutions, almost. And the People. The Spanish language. The feeling that at 21.00 it seems 17.00 or 18.00  for so many people around. And at 22.40 the ladies with the shopping bag talking about sitting on a step in PlazaTirso De Molina as if it were noon. Me soy enamorada of this city.


A delicious, very fast dessert to celebrate the home-coming back:


INGREDIENTS:
 for the base:
 2 egg whites
 4 tablespoons of sugar
 half lemon juice1
 teaspoon of cornstarch 
green food coloring if you have it, a few drops (it's not necessary of course)

For the cream:

 2 egg yolks
 about 500 ml milk 
2 tablespoons sugar
 2 tablespoons of cornstarch 
50 gr dark chocolate 
1 tablespoon of bitter cocoa 
1 tablespoon of dried mint
 2 drops of green food coloring (obviously not necessary)
 For the base:whisk the whites till they re hard, together with lemon juice, slowly adding the sugar,
 
and 1 teaspoon of cornstarch.  

The meringue is ready when it will not move if you turn the container upside down. You can color it with two drops of green food coloring like I did. 
At this point with the help of a ladle of silicone spread it (keep two spoonfuls aside) on a baking sheet covered with baking paper. Give it a rather thick circular shape (if you make it too thin, it will be hard to detach it). With the two spoonfuls of meringue that you spared, make small balls that you will later use for decoration ( crumbling it over the finished cake).  
Bake at 100-110 degrees for 1 hour. After an hour, remove the smaller pieces of meringue, and continue to cook the largest circle for another half hour.
 Let it cool down. 
Meanwhile, prepare the cream: make a custard  as you prefer, adding the mint to  the milk  ( heat the milk with the mint, when it is hot pour it on the yolks that you have previously beaten with sugar and cornstarch, mix well and put it on the fire again to thicken.You can also add two drops of green food colour here.When the cream is a bit 'colder, add the dark chocolate cut into small pieces ( cream must not be very hot, otherwise the chocolate will melt! ). 
Spread the cream on the meringue base, sprinkle the bitter cocoa on top and crumble over the pieces of meringue cooked separately. Make it cool (the fridge will make the meringue wet and chewey, pay attention: better to let it out)

Polpette di lenticchie - Lentils balls


Voglio mangiare meno proteine animali, come fare? aumentare i legumi, senza dubbio ! che aiutano anche a dimagrire. Ma che noia mangiare sempre legumi bolliti! proviamo un po' a fare delle gustose polpette....facili e veloci!

 INGREDIENTI:

lenticchie (io ho messo anche un po' di piselli secchi lessati il giorno prima, vanno bene tutti i legumi) circa 500 gr
2 cipolle
2 spicchi aglio
3 carote grandi
1 cucchiaio di pasta di curry rossa (o altro curry anche in polvere, leggermente piccante)
sale
pepe
1 cucchiaino origano
1 cucchiaino basilico
1 cucchiaino maggiorana
1 cucchiaino prezzemolo
qualche cucchiaio di farina di mais (per polenta) oppure pangrattato

PER LA SALSA:

300 gr yogurt magro
2 cipollotti freschi (o cipolla rossa finemente tritata)
1 cucchiaino di burro di arachidi salato

Scolare benissimo le lenticchie. Devono restare il più asciutte possibile. Frullare tutti gli ingredienti a poco a poco.
Con le mani bagnate formate delle polpette, passatele dentro la farina di mais o il pangrattato e adagiatele su una teglia.
Cuocete in forno 180 gradi per circa mezz'ora.
Condite con la salsa preparata mescolando yogurt, cipollotti tritati finemente e il burro di arachidi.
Se le servirete con una fetta di polenta arrostita, avrete un piatto unico!

INGREDIENTS:

lentils (I also put come dried peas which I had boiled the day before, but any legume is fine here) about 500 gr

 2 onions 
2 garlic cloves 
3 large carrots 
1 tablespoon of red curry paste (or other curry powder, slightly spicy) 
salt  
pepper 
1 tbls Origan  
1 tbls basil
1 tbls marjoram 
1 tbls parsley 
a few tablespoons of corn flour (for polenta) or breadcrumbs
FOR THE SAUCE:


300 gr light yogurt 

2 fresh onions (or finely chopped red onion) 
1 teaspoon of salted peanut butter

Drain the lentils very well. They must remain as dry as possible. Blend all the ingredients little by little. With wet hands form some meatballs, pass them in corn flour or breadcrumbs and place them on a baking sheet. Bake in the oven 180 degrees for about half an hour. Season with the sauce prepared by mixing yogurt, finely chopped spring onions and peanut butter. If you serve them with a slice of grilled polenta, you will have a unique dish! Enjoy your meal!

Torta morbida alla frutta senza burro senza uova con base allo yogurt - Soft cake with fruites, without butter and without eggs, with yogurt)







INGREDIENTI:

PER LA BASE:

130 gr yogurt magro bianco
100 gr zucchero
100 gr latte (io ho usato latte di mandorla) . forse se l impasto dovesse essere troppo asciutto, dovrete aggiungerne un po', anche fino a 150 gr, se usate la farina integrale: tende ad asciugare di più)
50 gr olio girasole
170 gr farina (io ho usato farina di farro integrale)
1 cucchiaio di lievito in polvere

PER LA CREMA:

potete usare la ricetta della crema senza uova che trovate QUI, 
aggiungendo una mezza fialetta di aroma di limone o qualche buccia di limone non trattato in più.
Oppure potete fare la crema come segue:
2 uova
500 ml latte
70 gr zucchero
40 gr amido di mais o maizena o fecola di patate
1 buccia limone o mezza fialetta di aroma di limone

Procedimento:


PER LA BASE:
mescolate tutti gli ingredienti, rimarrà una pastella non lavorabile con le mani.
Oliate e infarinate uno stampo da crostata, e versateci la pastella dentro. Infornate per 15-20 min a 180 gradi.Lasciate raffreddare bene prima di staccare lo stampo.

PER LA CREMA:
Scaldate prima il latte. Poi a parte mescolate gli altri ingredienti, e aggiungeteli al latte già riscaldato ma che non bolle. Mescolate sempre con una frusta e fate sobbollire per circa 5 minuti fino a far diventare ben densa la crema.
Versate la crema calda sulla base della torta. fate raffreddare in frigo.

Al momento di servire, tagliate la frutta che più vi piace e sistematela sulla torta.

INGREDIENTS:FOR THE BASE:120 gr low fat white yogurt
 100 gr sugar 
100 gr milk (I used almond milk). maybe if the dough should be too dry, you have to add a little milk, even up to 150 gr, if you use the whole wheat flour: it tends to dry more)
 50 g sunflower oil
 170 gr flour (I used whole spelled flour)
 1 tablespoon of baking powderFOR THE CREAM:

 
you can use the cream recipe without eggs that you find HERE, adding lemon flauvor or some untreated lemon peel.Or you can make the cream as follows:2 eggs 

500 ml milk 
70 gr sugar
 40 gr cornstarch or potato starch 
1 lemon peel or half lemon aroma vial
Method:FOR THE BASE:mix all the ingredients, it will remain a non-workable batter - quite liquid, you cannot work it with your hands. It is ok!Oil and flour a tart mold, and pour the batter inside. Bake for 15-20 min at 180 degrees. Let cool well before removing the mold.FOR THE CREAM:Heat the milk first. Then separate the other ingredients, and add them to the milk already heated but not boiling. Always mix with a whisk and simmer for about 5 minutes until the cream becomes thick.Pour the hot cream on the base of the cake. let it cool in the fridge.When serving, cut the fruits you like and place it on the cake.Enjoy your meal!

Pasta di farina di castagne, porri, speck,semi finocchio - chestnut Pasta,leeks, fennel seeds

  
Buona questa pasta! l avevo scoperta tanto tempo fa, e finalmente l'ho rifatta!
complicato trovare qui in Germania la farina di castagne, perciò l'ultima volta che sono stata in Italia l'ho ricomprata in quantità industriali e la sto propinando a tutte le cene ad amici e conoscenti...
La prossima volta la farò in forma di trofiette con il sugo di noci ...o col pesto.
Per ora ecco qui la ricetta: si può fare anche senza uova (specialmente se fate le trofie), l altra volta la abbiamo fatta senza....viene perfetta lo stesso.... Voi potete ometterle...come preferite!

INGREDIENTI 

metà farina di castagne, metà farina integrale (io ho usato farina integrale di farro e poca farina integrale normale: è lo stesso, potete usare anche normale farina bianca)
acqua quanto basta a fare un impasto elastico e non appiccicoso
2 uova (facoltative: viene bene lo stesso anche senza, stavolta le ho usate, la volta scorsa no....)
sale (non dimenticatelo perchè la pasta di castagne tende ad essere un po' dolce)

Per IL SUGO: per 4 persone

4 porri
200 gr pancetta a dadini
2 cucchiai di olio
1 noce di burro
sale
pepe
2-3 cucchiaini di semi di finocchio
facoltativo: 1 cucchiaio di semi di girasole o qualche gheriglio di noce tritato grossolanamente

Impastate  le farine con le uova (potete anche non mettere le uova, ma se le mettete, prima aggiungete le uova e impastate, e poi vedete se l impasto richiede acqua). L'importante è che l impasto resti elastico ma non appiccicoso sulle mani. Fatelo riposare coperto da un canovaccio, e intanto preparate il condimento:
lavate bene i porri, spesso c è terra tra una foglia verde e l altra: affettateli, compresa la parte verde
e metteteli in padella con 2 cucchiai di olio e un po'd acqua.- Fateli stufare. Aggiungete sale, pepe e i semi di finocchio, e a fine cotture a. Spegnete. 
Preparate le tagliatelle o come ho fatto io, i maltagliati: create delle lasagne e poi con un coltello tagliate irregolarmente delle striscioline.
Fatele lesssare in acqua salata con un cucchiaio di olio di girasole, per non farle attaccare.
Riscaldate i porri e date un'ultima rosolata aggiungendo anche la pancetta e qualche seme di girasole o qualche gheriglio di noce a pezzettini.
Condite la pasta e aggiungete una noce di burro sulla pasta calda in modo che si sciolga.

INGREDIENTS:  
Half chestnut flour, half whole wheat flour (I used whole spelled flour and a little plain wholemeal flour: it's THE SAME, you can also use plain white flour) 
Water (enough to make an elastic not stickydough ) 
2 eggs 
salt (do not forget it because Chestnut Pasta tends to be a little sweet)
For THE SAUCE: for 4 people

 4 porris (leaks)
 200 grams of diced bacon
 2 tablespoons of oil 
1 spoon of  butter
 salt 
pepper
 2-3 teaspoons of fennel seeds
 optional: 1 tablespoon of sunflower seeds or some coarsely chopped walnuts 


Mix the flours with the eggs and maybe afterwards see if it is required a little water (i. The important thing is that dough remains elastic but not sticky on the hands. Let it rest covered with a cloth, and in the meantime prepare the dressing:Wash well the leeks well,  slice them, including the green part and put them in a pan with 2 tablespoons of oil and a little water. - Let them stew. Add salt, pepper and fennel seeds.

Then prepare the pasta: tagliatelle or, as I did, maltagliati (that means: bad shaped!!)create a sort of flat pasta like lasagna and then with a knife, cut the strips irregularly.Let them boil in salted water with a tablespoon of sunflower oil.Heat the leeks and give a last browning adding the bacon and some sunflower seeds or some walnuts in small pieces.Season the pasta and add a knob of butter on the hot pasta so that it melts.Enjoy your meal!

Scones light proteici senza burro - Light proteic scones without butter











Gli scones sono dei panini tiipici che vengono mangiati in inghilterra e irlanda per il tè delle 5.
Io li ho fatti per colazione: questa è una variante più proteica e ricca del pane.
la ricetta originale prevede 175 gr di burro, che io ho eliminato usando il quark o lo skyr: quark e skyr sono una specie di yogurt greco estremamente denso con praticamente zero grassi (0,1) e moltissime proteine (11-12%): vengono perfetti! e ancora più proteici, considerate le uova e il quark.
Ciascuno ha circa 160 (senza uvetta)-180 calorie  (con uvetta). Hanno il 20% di proteine, e il 70% di carbo, solo l'11% di grassi: se volete fare più equilibrato in grassi, spalmate un velo di burro o di crema di arachidi, e sarete in Zona.

INGREDIENTI per circa 20-22 panini
(queste dosi vi basteranno per una settimana!) potete tenere l'impasto da parte e cuocerlo per pochi minuti in forno prima di consumarli!


900 gr farina (io ho messo: 600 integrale di farro e 300 farina integrale di grano)
(se volete farli ancora più light e proteici, usate almeno un terzo di crusca d'avena)
200 gr skyr o quark
1 bustina e mezza di lievito (3 cucchiai)
1 pizzico di sale
3 uova (sostituibili con 180 gr di yogurt bianco magro)
470 gr latte (io ho usato latte di mandorla)
(io per mio gusto ho aggiunto qualche manciata di uvetta).

Fate scaldare il forno a 250 gradi, e cominciate a preparare l impasto (non ci vorrà molto).
mescolate gli ingredienti secchi. Aggiungete il quark. a parte mescolate le uova con il latte e aggiungetele all impasto. Se volete aggiungete l uvetta.
Verrà un impasto piuttosto appiccicoso: se userete le mani per impastare, vi resterà parecchio attaccato alle dita. Niente paura! con le mani appiccicose (o un cucchiaio), fate delle pallette (un po' meno di una pallina da tennis, un po' più di una pallina da pingpong) e adagiatele sulla teglia ricoperta di carta da forno. Non avranno la forma di pallette perchè le vostre mani sono ancora appiccicose (anche se usate il cucchiaio non vi verranno di nessuna forma!). Nessun problema: l importante è mettere una certa quantità, alla forma penserete dopo! Lasciate un pochino di spazio tra una palletta e l'altra. A questo punto cercate di staccare l impasto dalle mani, poi lavatevele. Con le mani ben bagnate a questo punto potete toccare la pasta senza che vi resti appiccicata: schiacciate le pallette (circa 2, max 3 cm di altezza) e date una forma più o meno circolare o ovale.
Infornate dai 3 ai max 10 minuti (il mio forno le cuoce in 3 minuti e mezzo, ma è parecchio "tosto", voi dovete vedere quando si sono gonfiati e la superficie è asciutta).
Mangiateli caldi o freddi, con burro e marmellata, con formaggio e prosciutto, con salmone, e....

Pre-heat the oven to 250 degrees, and start preparing the dough (it will not take long).mix the dry ingredients. Add the quark. separately mix the eggs with milk and add them to the dough. If you want, add the raisins.

It will be a rather sticky dough: if you use your hands to knead, it will remain quite attached to your fingers. No fear! with sticky hands (or a spoon), make balls (a little 'less than a tennis ball, a little' more than a pingpong ball) and lay them down on the baking sheet covered with baking paper. They will not have the shape of balls because your hands are still sticky (even if you use the spoon!). No problem: the important thing is to put a certain amount of dough, you will think later
about the shape! Leave a little space between one ball and the other. At this point try to remove the dough from your hands, then wash them. With wet hands at this point you can touch the dough without sticking to it: press the balls to form disks (about 2, max 3 cm in height) and give it a more or less circular or oval shape.Bake from 3 to 10 minutes (my oven cooks in 3 and a half minutes, but it is quite "tough", you must check when the scones are grown and the surface is dry and a little golden).Eat them hot or cold, with butter and jam, with cheese and ham, with salmon, and ....enjoy your meal!

Crostata cioccolato e amaretti - Chocolate and amaretti pie


Per l'occasione l'ho ricoperta di acini d'uva, che ci stanno benissimo, ma ovviamente si può lasciare nuda bruca, oppure coprire con amaretti  o ciuffetti di panna.
Buonissimissimaaaaaa!

INGREDIENTI: per tortiera da 24 cm

Per la base:

150 gr amaretti
100 gr mandorle tritate (o comprate già in polvere come faccio io)
50 gr burro e 50 gr latte (la ricetta originale prevevdeva 100 gr burro, voi scegliete come preferite)
70 gr zucchero (la ricetta originale diceva 100 gr ma io non amo il gusto troppo dolce, voi scegliete come preferite)
30 gr farina
1 pizzico di sale

Per la crema:

2 uova
300 gr cioccolato fondente
3 cucchiai di amaretto di saronno o altro liquore se non avete l amaretto
200 ml di panna
1 bustina vanillina
frutta: a scelta


Fate sciogliere il burro (in microonde per 20/30 secondi o in un padellino sul fuoco). Pestate o frullate gli amaretti e aggiungete tutti gli altri ingredienti secchi, amalgamandoli con il burro fuso (o con il burro e il latte). Sistemate l'impasto in una teglia da torta cercando di distribuire bene il prodotto non solo sulla base ma anche sui lati (che dovranno contenere la crema).
Fate cuocere in forno caldo a 180 gradi per circa 15/20 minuti (controllate il vostro forno però). Qualcuno usa i fagioli per evitare che l'impasto gonfi, io non li ho usati e non è assolutamente gonfiato (non c'è lievito ed è asciutto). Tirate fuori la teglia e fate raffreddare.
Prepariamo la crema:
fate sciogliere a bagnomaria il cioccolato fondente, quando è sciolto togliete dal fuoco e unite i 2 tuorli, la vanillina, mescolate bene e riportate sul fuoco per circa 2 minuti (non di più!) mescolando sempre, per fare addensare un poco la crema. Togliete dal fuoco, aggiungete il liquore e mescolate.
A parte montate la panna e, quando la crema al cioccolato sarà a temperatura ambiente, mescolatela delicatamente al cioccolato.
Decorate come preferite, secondo me della frutta ci sta da dio! uva, ma anche lamponi, mirtilli, pera...
Mettete in frigo per almeno un paio d'ore: più è fredda più è buona!

300 g of dark chocolate
 3 tablespoons of amaretto Saronno or other liqueur if you do not have amaretto
 200 ml cream
 1 vanilla sachet

 Melt the butter (microwave 20/30 seconds or in a pan on the stove). Crush the amaretti and add them all the other dry ingredients, mixing them with the melted butter and milk. Place the dough on the cake pan, trying to distribute the dough not only on the basis but also on the sides (they must contain the cream).Bake in hot oven, 180 C for about 15/20 minutes (check your oven, however). Someone uses beans to avoid the dough to swollen, I have not used them and it is absolutely remained flat (There is no yeast and the dough is dry). Pull out the pan and let it cool .Preparing the cream: melt a bain-marie the dark chocolate, When melted, add the 2 egg yolks, the vanilla, mix well and cook for about 2 minutes (no more!) always stirring, as to thicken the cream a little. Remove from heat, add the liqueur and stir. Whip the cream and, when the chocolate will be cooled down, mix the cream gently with chocolate.Decorate as you like.Refrigerate for at least a couple of hours: the cooler the better! Cover with your favourite fruit, and....
