Crema di zucchini meravigliosa - Zucchini magical soup thai style









In this period  the zucchini are everywhere, so, you MUST try this  WONDERFUL CREAMY SOUP!
My friend Adriana gave me the recipe, one evening I went to visit her in the countryside 
She proposed to prepare that for dinner but I was skeptical.....I was hungry and this recipe looked a bit "poor" and sad....but!

Shortly after trying it, I was licking the pot, begging my friend to get the recipe and asking her permission to publish it on the blog in imperishable memory ...
It 's OUTSTANDING! rice milk gives it a vaguely thai flavour... wonderful!

ps. in the photo, made with a horrible old mobile phone, the cream looks green, while actually is yellow-orange because of the turmeric!

INGREDIENTS:

1 kg zucchini

2 medium onions

2 stalks of celery

2 carrots

1 lt of rice milk

1/2 teaspoon turmeric

fresh herbs (thyme, mint, rosemary, sage, parsley,  what you have!)

a couple of tablespoons of olive oil

a few tablespoons of roasted sesame seeds

salt

Peel about half the zucchini and cut the peels into rather small squares .
Fry them in a pan with a tablespoon of olive oil until they become cooked but still crunchy ...
In a pan, fry the chopped onions with the chopped celery and the chopped carrots. Add turmeric (frying and warming it will unleash its aroma) and the chopped herbs. After about 10 minutes, add the pieces of zucchini (the ones you peeled and the ones you did not peel). Cook for a few minutes, then add the rice milk and season with salt. Cook over low heat for a quarter of hour- twenty minutes, then use a blender and mix everything.
Serve hot, and put on it some "crunchy conches"  and sesame seeds

In questo periodo in cui gli zucchini spuntano come funghi dappertutto, beh, DOVETE provare questa DELIZIA MERAVIGLIOSA!
La ricetta me l'ha passata la mia amica Adriana una sera che sono andata a trovarla in campagna...
Ero molto scettica perchè molto affamata, e la proposta di una cremina di zucchini mi pareva "porella" e un po' triste....ma!

Poco dopo averla assaggiata, stavo leccando la pentola, implorando Adriana per avere la ricetta e chiedendole il permesso di pubblicarla sul blog a imperituro ricordo...
E' ECCEZIONALE! il latte di riso le conferisce un sapore vagamente thai ...splendido!

ps. nella foto (fatta con un pessimo cellulare) la crema sembra verde, ma in realtà il colore è giallo arancione causa curcuma!

INGREDIENTI:

1 kg abbondante di zucchine

2 cipolle medie

2 coste di sedano

2 carote

1 lt di latte di riso

1/2 cucchiaino di curcuma

erbette fresche (timo, menta, rosmarino, salvia, 
prezzemolo, tuutto quello che avete!)

un paio di cucchiai di olio

qualche cucchiaio di sesamo tostato

sale

Sbucciate circa la metà delle zucchine e tagliate le buccette a quadratini piuttosto piccoli.
Soffriggeteli in una padella con un cucchiaio di olio fino a farli diventare croccantini...
In una pentola, soffriggete le cipolle tritate con il sedano tritato e le carote tritate. Aggiungete la curcuma (che soffriggendo e scaldandosi sprigionerà il suo aroma) e le erbette tritate. Dopo circa 10 minuti, aggiungete i pezzi di zucchine (sia quelli sbucciati che quelli non sbucciati). Fate cuocere qualche minuto, poi aggiungete il latte di riso e aggiustate di sale. Fate cuocere a fuoco lento per un quarto d'ora- venti minuti, poi date una passata di minipimer.
Servite calda, e sparpagliate di "croccantini di buccine" ogni piatto, insieme a una abbondante spolverata di sesamo tostato
