Buon natale ...alla malinconia - Merry Christmas to...melancholy

Oggi (e in genere in questi giorni pre natalizi) un po' di malinconia.

Vengono delle immagini alla mente. La pista di pattinaggio di Budapest e il vin brule' bevuto li' accanto. Una pipi' che scappa dove non dovrebbe. Chissa' perche'.

Forse perche' il pensiero va allo scorso anno, in questo stesso periodo, quando ho sentito lo scempio fatto nelle parti piu' tenere e fragili di me. Tornano delle immagini con un senso di incredulita' e di assurdita'. Sara' il periodo dell'anno.

Ho letto una bella citazione che pare essere di Renoir
"Il dolore passa, e resta la bellezza". La bellezza dei ricordi, delle situazioni vissute. Quelle cose che ti fanno sorridere, ripensandoci. A me capita spesso rispetto ai ricordi passati.
In altri casi, quando non c e' stata bellezza, il dolore passa e resta ....il niente.
Vengono altri istanti alla mente degli ultimissimi anni, tanti posti e tante situazioni, e con loro viene la consapevolezza che quei ricordi sono pieni di me, e di nessun altro. Sono stata io a crearli, a dargli forma. MI rendo conto che l'altra persona e' sbiadita, non ha dato ne' colore ne' sapore al momento, e non si tratta di una mia distorsione della memoria. Semplicemente, niente di interessante da dire, da dare, da essere. Al limite, qualche penoso tentativo di copiare e imitare qualcun altro. A volte me.
La malinconia passa subito quando apro gli occhi sulla vita adesso! Resta il dispiacere per il tempo sprecato, troppo tempo.

E poi vengono in mente le persone che non ci sono piu', l infanzia, papa' e un fratello che ...., una mamma che ..... L'albero di natale, altissimo nei ricordi, addobbato da me e mio padre in un rituale atteso con eccitazione, in un salotto mai piu' rivisto. La voce di papa' che mi sveglia alla mattina dicendomi che era arrivato Babbo Natale, di alzarmi per andare a vedere.... Il tavolo imbandito, le tartine acciughe e burro e quelle salmone e burro che erano le mie preferite, e il goccetto di Martini rosso in cui intingere la lingua. I momenti delle feste fanno sentire la mancanza delle persone che sono state testimoni della tua vita. Senza testimoni la fluidita' stupisce e raggela, diventa qualcosa di puntiforme.

Questo non vale ovviamente solo per l'infanzia. Sono tanti i ricordi che se ne vanno senza raccontarli, senza testimoni che li riportino in vita e leghino con un filo i punti.

Qualche giorno fa un amico ucraino mi ha mostrato delle foto di Vienna adesso, addobbata, e gli addobbi sono sempre gli stessi. Sara' che ho trovato la ricetta della VERA Sacher Torte. Quella perfetta. Quella mangiata a Vienna.

Un inverno freddo, un clown per la strada e la torta. Una immagine.

Comunque io la ricetta l ho ancora modificata rendendola poco poco piu' leggera. Ma e' perfetta.

Sara' tutto l insieme. Sara' che e' la consapevolezza che non sono le situazioni reali a darmi queste sensazioni ovviamente, non sono le persone reali, ma alcuni sogni del passato che non hanno lasciato quasi altro che appunto.... una traccia di malinconia.

Me li godo questi momenti di malinconia agrodolce. So che passano. Non li rifiuto. IL tempo passa, certi sogni scivolano via, e altri ne prendono il posto.

Una canzone, forse la conoscete.

Domani il treno, e poi la torta, gli gnocchi (magari non in questo ordine!), e poi qualche persona speciale e i programmi e le risate e la festa e un incontro atteso...e il sapore del cioccolato denso....ma oggi, assaporo questo gusto di grigio fumo tra la lingua e la gola

Maybe 'cause my thoughts turn to last year at this same time, when I heard the havoc made in the  more tender and fragile parts of me. Images return  with a sense of disbelief and nonsense.

Probably is the end of the year. 

I have read a nice quote, maybe of Renoir.
"Pain passes by, the beauty remains".
When there was no beauty, when the pain passes buy, the Nothing is what you have.
Many memories where the taste was given by me, and only me. Nothing really shared, nothing really impressed by the other person, who really had nothing to give or to share.
 
Moreover, people come to mind, childhood, dad and a brother ...., a mother ..... The christmas tree, high in memories, draped by me and my father in a ritual awaited with excitement, in a living room never seen again. The voice of Dad that wakes me up in the morning saying that  Santa Claus came during the night while I was sleeping, it was beautiful, to get up to go and see .... The supper table, the anchovies and butter sandwiches and the salmon and butter ones were my favorite, and the drop of Martini red where I was allowed to dip my tongue. The moments of the holidays make you feel the lack of people who have been witnesses of your life. Without witnesses fluidity surprises and freezes you, it becomes something punctiform."Without the people who know who you are, the stories of the past and childhood become just words to tell, stories that you do not even know if they are true or not" (Debra Winger, In treatment)This does not apply of course only for childwood. There are so many memories that go away without recounting, without witnesses that remind them to life and tie the points with a string.A few days ago a friend of Ukraine showed me pictures of Vienna now, decked, and the decorations are always the same. Maybe is just 'cause I found the recipe for the very best  and original Sacher Torte. That is perfect. The one eaten in Vienna.A cold winter, a clown on the street and the cake. An image.Anyway, I modified the recipe I still have the little making little more 'light. But it 's perfect.Maybe it is just everything, all together. Maybe is 'cause I know that melancholy is not for real people, but for some dreams of the past that have left almost nothing more than a trace of ...melancholy.I will enjoy these moments of melancholy. So they pass. Do not reject them. The weather changes, certain dreams slip away, and others will take their place.A song, perhaps you know it.Tomorrow the train, and then the cake, gnocchi (maybe not in that order!), And then a few special person and the programs and laughter and celebration and an

Insalata meravigliosa! con tacchino oppure seitan (o tofu) frutta secca e melograno- Wonderful salad with turkey or seitan (or tofu) dried fruits and pomegranate


Adoro questo piatto.
Spesso lo facevo con il tacchino, ma ora ho scoperto che col seitan e' ancora piu' buono se possibile, e certamente piu' sano. E anche col tofu e' niente male!
E' una ottima armonia di sapori.  Ed e' bellissima da vedere. Non spaventatevi a leggere quanta frutta secca dolce ci vada. Non vi dara' alcun fastidio. Ho provato a proporla a bambini capricciosi a tavola, con le mamme che mi dicevano che i loro figli avrebbero schifato tale piatto "strano", e invece....se ne sbafavano piatti interi. Ho provato a proporlo a persone che affermano di non amare i sapori dolci e salati insieme, e si mangiavano quasi anche il piatto. E' ottima. La valeriana, col suo sapore dolce, e' piu' che indicata, ma in certi casi ho usato anche altre insalate, a volte dei mix contenenti anche la rucola. Va bene tutto, anche se la valeriana e' il top.

ps. mi piacerebbe trovare un nome piu' furbo a sto piatto....tipo Insalata Millecolori....ma io odio leggere le ricette sui blog che non titolano bene il piatto....devo sapere quale proposta culinaria mi fanno prima di dovermi leggere tutto il post! mumble...


INGREDIENTI (per ogni porzione)

1 manciata abbondante di insalata valeriana (o altro mix di insalatine)
4 fettine sottili di tacchino lessato, oppure seitan, oppure tofu
1 cucchiaio abbondante di uvetta ammollata
1 cucchiaio abbondante di albicocche secche tagliate a dadini
1 cucchiaio abbondante di pinoli (o mandorle a scaglie o noci a pezzetti)
2 cucchiai abbondanti di semi di melograno
4 cucchiai di olio evo
4 cucchiai di aceto balsamico
1 pizzico di sale

Mettere l'insalata su un piatto piano e stenderla bene. Sopra adagiare le fettine di tacchino o seitan (o di tofu) per ricoprirla tutta. Fare una vinaigrette mescolando molto bene l'olio il sale e l'aceto balsamico (io uso una bottiglietta di plastica chiusa che agito bene). Stenderne circa la meta' con l'aiuto di un cucchiaino sulle fettine di tacchino/seitan (o tofu) per ricoprirle bene di salsa. Cospargerle poi con il resto degli ingredienti. Dare una ultima ripassata con il resto della vinaigrette. Lasciare riposare per qualche minuto per dare il tempo al seitan di impregnarsi bene. Gustare. Buon appetito!

I love this dish.

Often I did it with the turkey, but now I have found that with seitan is even more good if possible, and certainly more healthy. And even with tofu is not bad!

 Valerian, with its sweet taste is more than indicated, but in some cases I have also used other salads, sometimes mixes, also containing the rocket. Everything is fine, although valerian is the top.

INGREDIENTS (for each serving)

1 generous handful of salad lettuce (or other salad mix)
4 thin slices of boiled turkey or seitan (or tofu)
1 tablespoon of raisins soaked
1 tablespoon of dried apricots, diced
1 tablespoon of pine nuts (or sliced ​​almonds or chopped walnuts)
2 tablespoons of pomegranate seeds
4 tablespoons extra virgin olive oil
4 tablespoons of balsamic vinegar
1 pinch of salt


Place the salad on a plate and spread it well. Above lay the slices of turkey (or seitan (or tofu) to cover it all. Make a vinaigrette by mixing very well the oil, the salt and the balsamic vinegar (I use a small plastic bottle closed well). Put about half of the sauce with the help of a teaspoon on slices of meat (or seitan (or tofu) to cover them well with sauce. Then sprinkle with the rest of the ingredients. Give a final buffing with the rest of the vinaigrette. Let stand for a few minutes to give it time to soak up the seitan well. Enjoy. Enjoy your meal!

Crepes senza uova - Crepes without eggs



Buona buona la ricetta crepes e a me le crepes piacciono piu' cosi' rispetto a quelle con le uova (che sinceramente non mi hanno mai detto granche'....troppo "ovose" per i miei gusti..)
Molto simili alla ricetta che uso sempre, quando hopoco tempo e ho voglia di mangiare qualcosa di sfizioso. In questo caso qui c e' anche un po' di latte e di maizena, che contribuiscono a creare la consistenza della crepe....


INGREDIENTI:

100 gr circa di farina integrale
140-150 gr circa di liquido (meta' latte di soia, meta' acqua)
1 cucchiaio di maizena
1 cucchiaino di curcuma in polvere
1 pizzico di sale
(se le volete fare dolci, aggiungete 1 cucchiaino di zucchero o stevia o malto all'impasto)

Mescolare gli ingredienti fino a creare una pastella piuttosto liquida.
Mettere a cuocere sulla piastra a fuoco medio. Quando si stacca da sola dalla piastra, con l'aiuto di un mestolo piatto di legno, giratela e cuocetela dall'altra parte, mentre sulla parte gia' cotta potete spalmare il ripieno scelto (in questo caso ho messo dello stracchino).
Arrotolate e gustate...buon appetito!

These crepes are very good, and I like them more than the ones with eggs (which frankly I have never enjoyed too much.... too "eggy" for my taste ..)

Very similar to the recipe I always use when I have little time and I want to eat something tasty. In this case, here there is a little' milk and cornstarch, which help to create the texture of the crepes ....


INGREDIENTS:


100 grams of wheat flour
Approximately 140-150 grams of liquid (half soy milk, half water)
1 tablespoon cornstarch
1 teaspoon of turmeric powder
1 pinch of salt

(if you want them sweet, add 1 tbs of sugar or malt or stevia)

Mix the ingredients together to create a fairly liquid batter.
Cook over medium heat on the plate. When it falls off from the plate, with the help of a ladle wooden plate, turn it and cook the other side, while on the already cooked side you can spread the filling chosen (in this case I put vegan cheese).
Roll up and enjoy ... enjoy!

Cheese cake con agar agar senza cottura! - Cheese cake with agar agar - not cooked!


Evviva l'agar agar/ lo sto sperimentando anche per la pasta di zucchero.
Lo trovate in qualsiasi supermarket etnico in forma di scaglie trasparenti. Chiedete al negoziante. L'altro nome con cui e' conosciuto e' KANTEN. Lo pagherete meno di 2 euro.

Appena avro' piu' tempo scrivero' dettagliatamente le reazioni dell agar agar a piu' prolungate cotture e quant/altro. Per ora solo una cheese cake, facile e buona :) qui ne avevo messa un altra versione con cioccolato bianco
La prima versione l ho fatta usando una gelatina di rose trovata in un supermarket etnico, e comprata perche' mi ricordava la deliziosa gul receli che gustavo a colazione quando lavoravo in Turchia. Ma quella comprata qui non aveva nulla a che fare con quella turca (ed era infatti confezionata in Romania...) (la gelatina di rose avevo provato anche a farla, la trovate qui sul blog)
Il risultato di questa prima cheesecake, che non ho pubblicato sul blog, e' stato discutibile (a me e all'amica per cui l avevo preparata non e' piaciuta, in compenso il terzo come si suol dire gode, infatti se ne e' mangiate due porzioni apprezzando alquanto...)
La seconda volta ho provato con la lemon curd, ed e' una delizia. Ma e' ottima anche senza niente.
Metto la ricetta "nature", personalizzabile a seconda dei gusti.

INGREDIENTI> (per due stampini rotondi monoporzione)

BASE:
2 biscotti tipo Prince (ripieni di cioccolato scuro o bianco) oppure 5 o 6 biscotti secchi piccoli
1 cucchiaino di burro
1 cucchiaino di panna liquida o di latte

RIPIENO:
300 gr formaggio tipo quark
100 gr panna liquida (io ho usato quella vegetale)
2 cucchiai di zucchero o di miele
1 cucchiaio abbondante di agar agar in scaglie
A scelta> marmellata, lemond curd,crema di cioccolato (facoltativo)

Sbriciolare i biscotti con le mani. Mettere a sciogliere il burro con la panna o il latte, versare sui biscotti sbriciolati, e impastare con le mani. Usare il tagliapasta o stampino dai bordi alti premendo la pasta di biscotto cosi' creata e formare la base del cheesecake.
Mettere qualche cucchiaio di panna sul fuoco con l'agar agar. Mescolare e lasciar sciogliere bene (ci vorra' un po' se l agar agar e' appunto in scaglie). Quando e' ben sciolto, aggiungere lo zucchero e a fuoco spento anche il formaggio e mescolare velocemente. Se volete aromatizzare il ripieno, m,escolate a questo punto il lemon curd o la marmellata o quant altro. Se invece volete lasciarlo "nature" semplicemente proseguite riempiendo con cucchiaiate di composto cremoso ma abbastanza liquido il tagliapasta, e riporre in frigo. Dopo almeno un ora togliere il tagliapasta. Il cheese cake e' pronto! Piu' lo fate raffreddare in frigo e piu' ne giovera' in ogni caso. Potete a questo punto decorare con fettine di frutta, o glassa al cioccolato, o usare altro agar agar con frutta frullata per creare un ottima gelatina di copertura con la frutta! Buon appetito!

 Long live the agar agar / I'm experimenting it also for sugar paste. You can find it in some eastern supermarket. The other name of agar agar is KANTEN. It is very cheap.

As soon as I 'll have more' time I will write details about the reactions of agar agar to more prolonged cooking and anything. For now, only a cheese cake, easy and good :)The first version I did it was with a roses gelatin found in a ethnic supermarket. Rose gelatine reminded me of the delicious gul receli that I used to have for breakfast when I worked in Turkey (I put the recipe in my blog, here. I also prepared anothe cheese cake, with white chocolate here) But this one gelatine had nothing to do with the Turkish (and was in fact manufactured in Romania ...)The result of the first cheese cake, which I did not publish on here, was questionable (to me and my friend who tasted it. but I must say that another friend liked it)The second time I tried it with lemon curd, and it 's a delight. But it 's also great with nothing.Here the recipe "nature", you can add ingredients to flavour the filling according to your taste

INGREDIENTS> (for two molds round portion)BASE:5 or 6 biscuits (Digestive type) or other biscuits you like 

1 teaspoon butter (soy butter) 
1 teaspoon cream or milk (soy )

FILLING:300 gr cheese ( quark or similar) 

100 g cream (I used the vegetable cream) 
2 tablespoons sugar (or honey) 
1 tablespoon of agar agar flakesjam, or lemond curd, or chocolate cream (optional)

Crumble the biscuits with your hands. Put to melt the butter with the cream or milk, pour over crushed biscuits and mix with your hands. Use the stencil cutter or high-sided pressing the cookie dough so to create and form the basis of cheesecake.Put a few tablespoons of cream on the fire with agar agar. Mix well and allow agar agar to dissolve (it will take 'a while' especially if it is not in powder but in flakes, from 5 to 10 minutes).  

When it is completely melted, add the sugar and -fire off - the cheese and stir quickly.  
If you want to spice up the filling, put at this point the lemon curd or jam or whatever else. If you want to let it simple, simply fill the cutter with the cream, let it cool for a short while then place it in the refrigerator. After at least an hour remove the cutter. The cheese cake is ready!  
Better if you let it cool more in the fridge. At this point you can decorate with slices of fruit or chocolate icing, or use more agar agar with pureed fruit to create a good coverage jelly with fruit! Enjoy your meal!

Cake design!

Ho partecipato a un seminario con la grande artista del cake design Michelle Winowo, segnalata tra i cento artigiani artisti da "tenere d'occhio" dal Victoria and Albert Museum di Londra.
Michelle lavora per alcuni colossi mondiali, fa torte spaziali e lavora a Londra. Fa ritratti iper realistici tratti da fotografie, e realizza questi ritratti con pan di spagna e pasta di zucchero!
Dopo una giornata di circa 10 ore di lavoro, ecco la mia creazione
(10 ore perche' soprattutto la prima parte e' stata un po' lentina, a causa del tentativo di Michelle di dare spiegazioni singole ed esaustive).
Devo dire che la mia manualita' non mi ha abbandonata, ne' una certa abilita' nel riprodurre fattezze e volti....nonostante la parte dedicata alla pittura finale sia stata velocissima perche' ci stavano buttando fuori dal posto dove facevamo lezione!!!!
Quando ero bambina amavo disegnare, e mi piaceva riprodurre fotografie di volti in scala , senza minimamente conoscere il metodo che usa la classica griglia per ingrandire. E' stato tornare un po' bambina riscoprire questa attivita'. Molto rilassante! L'anno scorso avevo ricominciato a dipingere, con l'aiuto di una pittrice davvero fantastica .

 I attended a seminar with the great artist of the cake design Michelle Winowo , reported among the hundred artisans artists  from the Victoria and Albert Museum of London.
Michelle works for some global giants, makes cakes for them and works in London. Her hyper realistic portraits are taken from photographs, and implemented in sponge cake and sugar paste!

After a day of about 10 hours of work, here is my creation
(10 hours' cause especially the first part has been a bit slow, because of Michelle's attempt to explain individually) I must say that my crafts did not abandone me, it's a certain ability I had when I was a child, so it has been fun to find I still have it in some sense ...like going back to childwood I must say! and very relaxing too. Despite the lack of time we suffered at the end of the seminar day, because the place had to close while we were still working !

When I was a child I used to copy photographs of faces (or even landscapes) in scale , without the classic grid which usually helps to enlarge. Last year I started painting again, with the help of a
really great painter ( my cousin!- and so who knows.... I might try to put all this into cake design! ahahaha

I segreti del Crumble di mele perfetto (vegan o no) - The secrets of the perfect Crumble apple pie (vegan or not)


Questo e' uno dei miei dolci preferiti in assoluto.
L'altro e' la tarte tatin (che ho promesso a una persona di fare la prossima domenica, quindi prossimamente sara' blogghizzata!). Il terzo e' una ricetta che avevo messo tempo fa sul blog
Tra questi tre non fatemi scegliere. Sono mostruosamente buoni. Tutti. Se faccio uno di questi dessert l'entusiasmo mi fa pensare: "ecco, QUESTO e' il mio dolce preferito". Poi pero' faccio l'altro e penso che "no, e' QUESTO il mio dolce preferito". Insomma, una lotta senza quartiere! :)

La tarte tatin e il crumble si assomigliano evvabbe' hanno le mele, ma il crumble e' estremamente piu' facile (sono tutti e tre dolci piuttosto semplici da fare, la Lemon Meringue Pie sembra solo piu' complessa ma e' solo poco poco piu' lunga).
E' una delizia il crumble, veramente una roba da favola. Adoro il suo profumo, adoro il fatto che si mangi caldo.
Ci sono alcune riflessioni da fare per il crumble perfetto.
 Eh gia' perche' SEMBRA un dolce semplicissimo, ma in realta', come tutte le cose semplici, ha un sacco di puntualizzazioni, varianti, attenzioni e dettagli cui badare (tutti deliziosi).

1) Non badate alle ricette in cui vi dicono di fare le mele a pezzi, pezzetti, cubetti, fette piu' o meno spesse. Giammai! il crumble deve avere le mele tagliate a quarti. Punto. Perche' con la cottura in forno le mele si ammorbidiranno il giusto, e voi avrete il piacere di affondare il cucchiaino nella morbidezza del frutto ricoperto di croccantezza. Se invece tagliate a pezzettini, la frutta si ammollera' molto di piu' e diventera' molto bagnata, un po' fradicia, quasi sciropposa in certi casi. E il crumble ne sara' inumidito..

2)Un trucchetto ulteriore e' NON coprire completamente le mele con il crumble> cosi' le mele si asciugheranno un po' e il dolce risultera' morbido sotto ma piu' croccante sopra....lasciate qualche buchino qui e li' (piccolo)
 3) Cottura delle mele si' o cottura delle mele no (prima dell'infornata)? vi dico subito che secondo me e' meglio di no. Ma ho provato in entrambi i modi. Il risultato e' delizioso comunque, ma la consistenza delle mele e' leggermente migliore se le lasciate crude fino al forno. Cioe', mele tagliate in quarti, con qualche goccia di succo di limone, e sopra cannella e zucchero. E a coprire, il crumble. Poi, forno. L'alternativa e' passare i quarti di mela in padella con un cucchiaino di burro lo zucchero e la cannella, qualche minuto fino a un massimo di 10, per farle ammorbidire un pochino (ma non troppo, devono essere comunque ancora tranquillamente spostate sulla teglia senza assoutamente disfarsi). Anche in questo caso, potrete provare e decidere quale versione fa per voi. Io preferisco la prima, anche se ultimamente ho sperimentato la seconda.

4) il passaggio FONDAMENTALE che spesso NON viene citato nelle ricette (e che qualche volta se ho fretta salto anche io, sigh) e' il raffreddamento della pasta in frigo. O ancora meglio in freezer (il che rende piu' veloce il passaggio). E' fondamentale. Perche' il burro freddo di frigo, una volta lavorato con le dita, tendera' a sciogliersi. Il passaggio in frigo o freezer lo rendera' di nuovo compatto, e le crosticine saranno piu' consistenti. Davvero.

5) un altro segreto per un crumble perfetto e' quello di spruzzare qualche goccino di acqua fredda con le dita sull impasto che andrete a lavorare. Questo raffredda le vostre dita, e raffredda la pasta, e facilita la lavorazione, e rendera' tutto piu' "crunchy". Ma mi raccomando, non deve essere una vera e propria aggiunta di liquido...deve essere solo una spruzzatina, quel movimento di dita chiuse che improvvisamente si aprono, come quando volete spruzzare un pochino d acqua sul viso di qualcuno, ecco!

6) dilemma delle dosi...ovvero, ho ritrovato la mia vecchia ricetta per il crumble, ed era meravigliosa: 100 gr di farina con 2 tuorli, 100 gr di burro, 80 gr di zucchero. Come vedete, molto diversa dalla ricetta qui sotto. Ma poi ho scoperto la versione senza uova che secondo me e' migliore e piu' "giusta" (mica deve essere una simil frolla la pasta, in fondo!).. poi ne ho fatte altre con proporzioni diverse, in particolare una aveva una progressione che aumentava di 25 gr ogni volta ogni ingrediente, per es. 25 gr zucchero, 50 gr burro, 75 gr farina (ovviamente raddoppiando o triplicando le dosi per la grandezza del dolce). Un'altra ricetta presa da Cucina Moderna, che mi ha accompagnato per anni perche' la trovavo perfetta, consegnava le seguenti dosi> 6 cucchiai di zucchero (che io diminuivo sempre un po'), 90 gr di farina e 100 gr di burro. Qui, con il burro che supera la farina, le briciole di crumble venivano decisamente ottime, grosse, e non c era l effetto sabbioso che viene quando la farina invece supera di brutto il burro. Addirittura c'e' chi usa una quantita' di farina doppia rispetto al burro utilizzato. Ho provato, ma il risultato e' un po' farinoso, c e' un sacco di farina "libera" che si amalgamera' col burro solo durante la cottura.Ma la torta verra' una delizia eh, l'ho gia' detto?
Insomma, il crumble perfetto....e' un po' come un guanto, o una scarpa. Voi potete provare la ricetta, ma poi....una aggiustatina qui, un'altra li'....lo adatterete al vostro palato. Con taaaanti esperimenti! io posso dirvi qual e' la ricetta perfetta per me al momento....ma ci tengo a scrivere anche altre dosi, in modo che possiate scegliere.

 7) PER FAVORE....non servite il crumble col gelato. Tantomeno alla crema. O ancora peggio, con la panna montata dolce. No no no.....please!!!Il gelato ammazzera' il gusto del crumble. E' troppo dolce, troppo intenso, troppo tutto.
.... mi raccomando. Mangiatelo con panna liquida (da cucina!!!! non da montare!!!!) fredda e non zuccherata. O qualche altro tipo di panna sufficientemente densa e ripeto NON zuccherata. ..con la semplice panna da cucina fredda il gusto della torta si amplifichera' divinamente. Dico davvero. Vi potra' sembrare strano mettere la panna che usate per i tortellini di fianco a una torta...ma fidatevi, e' la soluzione migliore che potrete trovare a portata di market.
Nella ricetta originale nordica c'e' la panna acida, che a seconda del paese in cui vi trovate, potrebbe non essere di facile reperibilita'. Io qualche volta ho usato meta' panna e meta' yogurt magro  (il che abbatte le calorie), o se a dieta anche solo yogurt magro possibilmente denso, e non e' niente male anzi se e' yogurt greco e' ottimo, ma....provate entrambe prima di decidere. Purche' ..no gelato e no panna montata. Vi soddisferebbero perchè sono creme buone (e il gelato è buono!), e sono dolci...ma non esalterebbero il sapore del crumble, lo coprirebbero anzichè esaltarlo! tanto varrebbe mangiarsi una qualsiasi torta margherita o di mele col gelato a fianco o la panna montata. E' veramente un peccato, vi perdereste qualcosa!! E poi non ditemi che non ve l'avevo detto eh! :)))

 8) ovviamente la panna da cucina che vi consiglio, usatela di fianco fredda. Crumble caldo, panna fredda di frigo. Questo è un altro trucchetto per esaltare al massimo il dolce: caldo contro freddo, morbido delle mele contro croccantezza un po' morbidosa burrosa delle briciole, dolce delle briciole contro aspro-dolce delle mele, insomma, una armonia di contrasti da esaltare e non ammazzare :)

 9) ovviamente manco considero gli pseudo-crumble in cui vengono messi fiocchi d'avena, o biscotti sbriciolati, o altri esperimenti che vanno a intaccare la maestosa semplicita' di questo dolce :)))) Giammai!!!


 10) con il burro di soya viene delizioso, come possono testimoniare alcuni allievi dei miei corsi di cucina, quindi potete tranquillamente veganizzare questo dolce!


  INGREDIENTI:

5- 6 mele (a me non importa che siano granny o altro, purche' siano bio...anche se in questo caso le sbuccio!)
 
1 cucchiaio di cannella

succo di mezzo limone

120 gr farina 

100 gr burro (di soia) (se volete la versione light del dolce usate la meta' della dose di farina, in questo caso sarebbe 60 gr)

80 gr zucchero (o 50 gr stevia in polvere)

buccia di mezzo limone grattuggiata (facoltativa)

NB> se volete tante briciole di pasta, raddoppiate semplicemente la dose...


Tagliate le mele in quarti, sbucciatele, irroratele con succo di mezzo limone (fase che potrete anche saltare, verra' tutto buono lo stesso, io qualche volta mi trovo senza limone e cosi'...). NON TAGLIATE LE MELE IN PEZZETTINI E LASCIATELE IN QUARTI. Fidatevi. Che senno' il crumble diventera' moscio con la cottura in forno e inoltre perdera' troppo liquido, lasciando una base sciropposa che intacchera' anche un po' la croccantezza delle briciole. A questo punto potete scegliere se metterle direttamente su una teglia (ricoperta di carta forno o anche senza nulla, il dolce non attacca per via dell'umidita' delle mele), spruzzarle di succo di limone e versarvi sopra la meta' dello zucchero e il cucchiaino di cannella e (opzionale) qualche scaglietta di burro. Oppure potete metterle prima in padella, farle riscaldare e cuocere per circa 6-8 minuti con 1 cucchiaino di burro, 3 cucchiai di zucchero e un bel po' di cannella (io esagero perche' la adoro....).Le mele dovranno ammorbidirsi ma non diventare molli, dovrete riuscire ancora a prenderle con le dita e spostarle sulla teglia senza spappolarle.
In una ciotola mescolate la farina con il burro freddo di frigo e l'altra meta' dello zucchero, e la buccia di limone grattuggiata (opzionale). Spruzzate il contenuto della ciotola con acqua fredda due o tre volte, e poi lavoratelo velocemente con le dita fredde in modo da avere grosse briciole, assolutamente NON un impasto omogeneo come una frolla. (se vorrete fare la versione light con tot farina e la meta' del suo peso in burro, l'impasto verra' molto sabbioso, non vi preoccupate, va bene cosi'! ci sarano granuloni di burro e farina, e molta "sabbia" farinosa, e' ok!) Mettete la ciotola con le briciole in freezer per 10 minuti, o se avete piu' tempo, anche in frigo, per mezz/ora. Poi versate le briciole sulle mele, e infornate in forno gia' caldo (e' importante!) per circa 30 minuti a 200 gradi o finche' la superficie non sara' diventata dorata e croccante (potrebbe volerci qualche minuto di piu').  Portate in tavola nello stesso recipiente di cottura (non cambiatelo!), e servite il dolce caldo a pezzi irregolari, prendendoli con una paletta o con un grosso cucchiaio. A fianco del pezzo di dolce, versate un paio di cucchiaiate di panna da cucina fredda di frigo (o panna da cucina mescolata a yogurt bianco NON zuccherato, o anche solo del buon yogurt bianco non zuccherato che sara' comunque piu' simile alla panna acida originale di quanto non sia il gelato o la panna montata!). Buon appetito!

This is one of my favorite desserts ever. Others are: la tarte tatin (which I promised to a friend sooner or later..)and the lemon meringue pie, which recipe I put time ago on the blog and I still have to translate.
All these big 3 are monstrously good. YUMM.  If I do one of these desserts the enthusiasm makes me think: "well, THIS and my favorite dessert." But then I do the other one and I think "no,' THIS my favorite dessert."

The crumble is a delight, really fabulous stuff. I love the smell, I love the fact that you eat it hot. Love it all.
But! you need to keep in mind some considerations in order to prepare the perfect crumble.

cause it seems a
simple dessert but actually, as all simple things, it has a lot of caveats, variants, attention and details to look after (all of them are delicious, tho).

 
1) Do not follow recipes telling you to cut the apples into small pieces, cubes, slices (no matter how thick). Never! the crumble should have  the apples
cut into quarters. That is. 'Cause wihile baking, the apples will soften enough BUT not too much , so that you'll have the pleasure of sinking the spoon in the softness of the fruit covered with crispness. If you, on the contrary, will cut the apples into small pieces, the fruits will blend much more and will get too wet, almost syrupy in some cases.

 
2) A further trick is> do 'NOT completely cover the apples with the crumble> so apples will dry a bit and the cake will result soft in the lower layer, but deliciously crisper above ....

 
3) Cooking apples before or not? I think better not. But I tried it both ways. The result is still delicious, but the texture of apples is slightly better if you let them raw until the get in the oven. I put the apples cut in quarters, with a few drops of lemon juice and cinnamon and sugar on the top, then I cover them with the crumble, and then I put all thatto bake. The alternative -> pass the apple quarters in a pan with a teaspoon of butter, 2 Tbsp of sugar and 1 tbsp of cinnamon, cook them for a few minutes up to a maximum of 10, to soften them a little (but not too much, you should still be able to move them on the baking sheet without reducing them to a mush). In this case, you can try and decide which version you need. I prefer the first, but lately I have experienced the latter. 


4) the very ESSENTIAL passage that often is unmentioned in the recipes (and sometimes I forget if I am in a hurry....) is cooling the dough in the fridge. Or even better in the freezer (which makes the process faster). It 's important. 'Cause the butter -cold from the fridge- once worked with the fingers will tend to liquefy. The shift in the fridge or freezer will make the dough compact, and the crusts will be  better. Really.
  
5) another secret for a perfect crumble is to spray some drops of cold water with the fingers on the dough you are going to knead. This passage cools your fingers down, chills the dough, and facilitates the work, and will make everything more "crunchy". But please, you must use only a few drops, not too much liquid! ... must be only a sprinkling, that movement of fingers , such as when you want to splash a little bit of water on someone's face, that's it! 

6) dilemma of doses ... that is, I have found my old recipe for the crumble, and it was wonderful: 100 grams of flour, 2 egg yolks, 100 g butter, 80 grams of sugar. As you can see, very different from the recipe below. But then I found the version without eggs and I found out it was better (mustn't be a sort of pastry dough, after all!) .. Then I made some crumbles with different proportions, in particular one had a progression increased by 25 grams each time each ingredient, for example. 25 g sugar, 50 g butter, 75 grams flour (obviously doubling or tripling the dose to the size of the cake). Another recipe taken from a cooking review was perfect to me> 6 tablespoons sugar (I used a little less), 90 grams of flour and 100 grams of butter. Here, with the butter over the flour, crumbs crumble was very good, large, and there was the sandy effect.In short, the perfect crumble .... is like a glove, or a shoe. You can try the recipe, but then .... a personal drop here, another there '.... you will adjust to your taste buds. With maaaaany experiments! I can tell you what's' the perfect recipe for me at the moment .... but I wanted also to write other doses, so that you can choose.
 

 7) PLEASE .... do not serve the crumble with ice cream. Nor custard. Or even worse, with fresh whipped cream. No no no ..... please! Ice cream gonna kill the taste of the crumble. It 's too sweet, too intense, too everything..... I recommend it. Eat it with cream or soy cream ( without sugar!!) Cold and unsweetened. . .. With the simple cold cream the taste of the cake still amplifies divinely. I'm serious.
In the original nordic recipe there is sour cream, which depending on the country you are in, it may not be easily available. I have used
sometimes half cream and half low-fat yogurt (reducing  the calories..). If you are on a diet or simply prefer the lightness of the yogurt, you can give a try also to  thick plain yogurt ( greek or turkish thick yogurt work wonderfully), but .... try both before deciding. But absolutely  .. no ice cream nor whipped cream. You would like them because they are good even alone (cream and ice cream are good!), And they are sweet ... but their flavor would cover the taste of the crumble, rather than enhance it! . It 's really a shame, you'll miss out !! I just tell you but... judge the difference by yourself and then let me know ok!! :)))

  8) obviously I recommend - use the unsugared cream COLD. Hot crumble , cold cream directly from the fridge. That is THE pairing. This is another trick to bring out the best from this dessert: warm against cold, soft apples against a little buttery crunchiness of the crumbs, sweet crumbs against sour-sweet apples, yummmm! in short, a harmony of contrasts to exalt and not kill the taste :)

 
 9) obviously not even consider the pseudo-crumble where there are oatmeal, cookie crumbs, or other experiments that are damaging to the majestic simplicity of this cake :)))) Never!

  10) with soy butter this dessert is delicious, as my "students" of natural cooking course can witness, so you can easily veganize this crumble!

  INGREDIENTS:

 5-6 apples ( granny or other, as long as are organic ... although in this case I peel them!) 
1 spoon of cinnamon 
lemon juice (half lemon)
120 gr flour 
100 g butter (soy butter) (if you want the light version, use half wheight of the flour, in this case 60 gr of butter)
 80 g sugar (brown is better) (or 50 gr of stevia powder)
grated zest of half lemon

NB> if you want much more crumble, double the doses of flour butter and sugar...

 Cut the apples into quarters, peel, drizzle with lemon juice (you can also skip the lemon step, will be ok as well, I sometimes find myself without lemon and so' ...). DO NOT CUT APPLES into small pieces but LET IN QUARTERS. Trust me. They would become too wet otherwise, and flabby when cooked in the oven: it will also lose too much liquid, leaving a syrupy base erode that  little crunchy crumbs. .
A this point you can choose to put the apples directly on a baking sheet covered with parchment paper (or nothing, as apples will create humidity) and pour the lemon juice, half of the sugar and a spoon of cinnamon and (optional) some flakes of butter. Or you can put them first in a skillet, heat them and cook for about 6-8 minutes with 1 teaspoon of butter, 3 tablespoons of sugar and a lot 'of cinnamon (I exaggerate' cause I love it ....). Apples, in 8minutes more or less, will soften but do not become soft, you will still be able to take them with your fingers and move them on the baking sheet without blending them.

 In a bowl, mix the flour with the butter cold from the fridge, the grated zest (optional) and the left sugar. Sprinkle the contents of the bowl with cold water two or three times, and then knead quickly with cold fingers so you have large crumbs, absolutely NOT a homogeneous mixture as a pastry. (if you are using the light version of doses, which is tot flour and the half of her wheight of butter, you will find a sandy stuff, with only a few crumbles, and it is ok! ) Put the bowl with the crumbs in the freezer for 10 minutes, or if you have more time, even in the fridge for half / hour. Then pour the crumbs over the apples and bake in the oven already'hot for about 30 minutes at 200 degrees or until the surface will become golden and crisp (it may take a few minutes more'). Brought to the table in the same pan (do not change it!), And serve the cake warm in irregular pieces, by taking them with a spatula or a large spoon. Next to the piece of cake, pour a couple of tablespoons of cold fridge cream  (or cream mixed with plain yogurt NOT sweetened, also only plain yogurt is very good as it will be more similar to the original sour cream than the ice cream!!!). Enjoy your meal!
